3 cloves garlic
1 large onion
1 x tin green/brown lentils, rinsed
1 x tin diced tomatoes
1 carrot, small cubes
1 zucchini, larger cubes
2 tsp curry powder
1 tsp paprika
1 tsp vegetta
1 cup water
two pinches basil
salt and pepper
2 tsp sour cream
1 cup cooked basmati rice
1. In a little olive oil, fry the garlic on medium heat until fragrant
2. Add onion and cook until becoming translucent
3. Add curry powder and paprika, stir to coat ingredients
4. Add lentils, carrot and zucchiniand cook for two to three minutes
5. Add tomatoes, vegetta and half the water. Cover and simmer for ten minutes
6. Add rice, basil and more water if mixture is becoming dry. Simmer for five more minutes.
7. Stir through sour cream and serve.

I'm glad to be home (even if I don't like the heat). I'll post more about the great time I had in Melbourne soon. However my time away from here and work has given me some new goals to achieve this year. Here they are (in no particular order).
- Move into a new career path amenable to my career objectives
- Develop a list of career objective/goals and categorise as short, medium or long term
- Settle on a degree to study and complete it - consider studying externally through a university rather than OUA
- Look at moving to Melbourne in the next twelve months
- Start a new hobby
- Attend yoga once a week
- Join Toastmasters
- Go walking for 30 minutes five times a week
- Take some time to smell the roses occasionally
